2 tbsp. oil
1 cup chopped onion
1 lb lean ground beef2 tsp. salt
1 tsp. chili powder1 bay leaf
1 cup raw Cavena
2 1/2 cups tomato juice
1/2 cup water
Heat oil in frying pan and add chopped onion. Cook over low heat for 5 minutes.
Add ground beef and cook over low heat until brown.
Stir in salt and chili powder
Place bay leaf in the bottom of a 2 /2 quart bean pot or baking dish. Spread half the browned meat mixture in the bottom of the pot, cover with half the rice.
Repeat the layers.
Over the top pour the tomato juice and the water.
Bake covered at 300- 325 degrees for 2 - 2.5 hours, or until Cavena is tender.
If necessary, add water to keep top covered with liquid during baking.
