2 tbsp. butter - divided
1 cup sour cream
1/2 cup all purpose flour
1 tsp. baking powder
1 cup Cavena Rice (cooked following package instructions)
1 100z. can cream of celery soup
3/4 tsp salt and pepper to taste1/2 tsp dried oregano
1/4 tsp dried basil
1/4 tsp dried thyme
1 cup grated sharp cheddar cheese
1 cup grated Monteray Jack cheese
1 cup chopped onion
1/2 tsp. chopped garlic clove
2 pks 10 oz. each frozen spinach, thawed and squeezed dry
1. Butter bottom and sides of 13 x 9 x 2 inch baking dish with 1 tbsp. butter. In a large bowl, combine 1 tbsp. butter and next ten ingredients. Stir in spinach and cheeses and onion and garlic.
2. Spread in baking dish. Bake uncovered at 350 degrees for 30-35 minutes on bottom rack or until toothpick inserted near centre comes out clean and edges are lightly browned. Garnish with a dollop of sour cream on cut squares.
Great hot, warm or cool.
